  • Minced ginger

  • 170g ramen noodles
  • 380ml coconut milk

Procedure

Heat oven to 375 degrees. Line a baking sheet with parchment paper. Cut tofu into cubes. Toss gently in a bowl with the cornstarch until coated. Drizzle with oil and soy sauce. Transfer to a baking sheet and bake for 30-40 minutes, until golden and crispy. Add a little bit of hoisin sauce. Also, heat the oil.

Add the mushrooms and bok choy. Saute for 3-5 minutes, until soft. Add garlic, ginger, and curry powder. Saute for 3-5 minutes. Add the broth and bring to a simmer. Add ramen noodles and simmer until cooked. Add coconut milk and season with salt and lime juice.

Reduce the heat to low, remove the lid and use a potato masher or the back of a fork to mash up at least half of the beans. Continue to cook for 2 to 3 more minutes until thickened. Remove the pot from the heat and stir in the pepper and lime juice. Cover until you’re ready to serve. Meanwhile, warm the salsa.

Bring the salsa to a simmer, stirring occasionally. Spread the black bean mixture over each tortilla and place each tortilla on an individual plate. Fry the eggs in the same skillet over medium heat, pour in 1 teaspoon of olive oil, and wait until it’s shimmering. Fry the egg until the whites are set, and the yolk is cooked to your preferred level of doneness.

Place the fried egg on top of a prepared tortilla and repeat with the remaining eggs. Spoon about one-fourth of the warmed salsa across each dish, avoiding the egg yolk. Use a slotted spoon or fork to do the same with the pico de gallo, leaving the messy tomato juices behind. Sprinkle with freshly ground black pepper.
